6:00pm on a Saturday August evening and it appears that everyone has rushed to the shore as I look at an empty dining room and two servers trying to find anything they can do to occupy their time. Having used the entire day to prep, take inventory and create the daily specials, that no one ever seems to appreciate, there is no time left but to ponder. Three years ago I was getting ready for my restaurants grand opening. Now having sold that and coming right back to where I started and it all began you think I would have learned my lesson on New Jersey and their culinary curiousity, or lack there of. Maybe its just Italian restaurants? who knows. I've tried to stop guessing. It seems to me that Chicken parm and spaghetti and meatballs is New Jersey's idea of italian.
Tonights specials-
Appetizer- Oysters fried with cilantro seasoned batter over radicchio cole slaw.
Entrees- Grilled Mahi Mahi served with corn and black bean salsa with orange citrus reduction.
Grilled pork loin with a 5 season spice rub. Served with grilled pears and a white wine pineapple sauce.
When people walk into this mom & pop's shop and hear these its as if they just saw a space ship land in front of their table and you would think they were about to be whisked away to a planet where there is no chicken parm and no spaghetti and meatballs. I wonder.......are they more afraid of there being no chicken parm and spaghetti and meatballs or the aliens??? .........Sometimes being passionate about your job sucks.
